From the rolling green hills of Piedmont in the north, to the stiletto heel of the boot in southern Puglia, each region has its own specialties, flavor palettes and preferred cooking techniques. Food traditions, a major source of regional pride, are largely shaped by geographic, historical, and climactic variance. Other traditions based in local culture include dialects and costumes. It could be argued that regional pride is the most important point of identity for Italian people, even more than national pride.
